What flour do you use?
Quality is of the utmost important at Carb Diem. Therefore, we only ever use unbleached, stoneground flours from local suppliers. Currently, we are using Eureka Mills flours because we love the product and what they stand for!
Can I freeze my breads/ pastries?
Breads can be frozen for up to 3 months.
Simply slice your bread, tightly wrap in cling film, freeze it, and toast slices as needed.
You can also freeze a whole loaf. To defrost, thaw it on the kitchen counter overnight. The next day, preheat the oven to 220C, rinse the bread under tap water for 5 seconds and bake in the hot oven for 5-10 minutes. It will taste as fresh as the day it was made! Cookies can be frozen, tightly wrapped, for up to 3 months. To enjoy, thaw on the kitchen counter overnight and enjoy at room temperature or - even better - slightly warmed in the oven/ microwave/ air fryer.
Croissants and Pain au Chocolat are best enjoyed fresh on the day they are baked.
What is the shelf life of your baked goods?
Our sourdough bread typically stays fresh for 4-5 days when stored properly. After that, it can still be used for toasting or recipes like croutons and bread pudding. If you know ahead of time that your bread won't be eaten in the next few days, we suggest freezing some (or all) of it when it's fresh!

Do you offer gluten-free/ wheat-free baked goods?
As much as we would like to cater to those with wheat allergies/intolerances, we cannot produce anything wheat free in a kitchen that processes large amounts of wheat. Sorry for any inconveniences!
Do you sell pre-sliced breads?
We sell our loaves in one piece to ensure maximum freshness! Once a bread is cut, it dries out more quickly, so we suggest you invest in a good quality bread knife and cut your slices as you go!.
Is sourdough bread healthy?
Sourdough bread can absolutely be a part of a balanced, healthy diet.
Due to its natural fermentation process, sourdough bread provides a number of health benefits:

I want to make my own sourdough bread. Where can I get a starter?

You have two options here:
1. Make your own starter (you can google the instructions, its simple but may take some time). Essentially you are mixing water and flour, and then feeding it with more water and flour in regular intervals. You should have a ready-to use starter in about 1-2 weeks. 2. Alternatively, if you are anything like me when it comes to patience, I am happy to share my starter with you! Please send me a message and I will be sure to save some for you during my next feed!
